I have no idea what an actual Banh Mi sandwich tastes like but this version is pretty darn good! A traditional Banh Mi sandwich, which is a Vietnamese sandwich, has meat and pickled veggies- none of those are included here. Pickling veggies isn’t something I’ve experimented with yet but plan to soon at some point. Today, I made a tangy dressing for the slaw and replaced the meat with tofu. Bread
- 1 loaf of baguette*, cut into 4 pieces & lightly toasted
*Note: I actually found a soft baguette that worked really well in this recipe! 4 ciabattas may also work!
TOFU
Tofu Ingredients
- 2 15 oz blocks of tofu
- 3 tbsp Tamari
- ¼ veggie broth
- ½ Lime, juiced
- 1 thumb of Ginger, minced
- 1 garlic clove, minced
Tofu Instructions
- Cut the tofu into 8 planks.
- Place in a shallow bowl and set aside.
- Whisk the remaining ingredients in a bowl then pour over the tofu planks. Allow the tofu to marinate for at least 30 minutes, flipping mid-way through.
- In a pan, over medium heat spray with coconut spray or add a bit of coconut oil.
- Now add the tofu and let it sear for 10 minutes.
- Flip then allow it to crisp for another 10 minutes. Set aside.
Slaw Ingredients
- 1 Lemon, juiced
- 1 garlic clove, minced
- ½ tsp Maple
- ¼ tsp Salt, or to taste
- ¼ tsp pepper
- 2 cup Slaw mix
Slaw Instructions
- Whisk all of the ingredients, except for the slaw.
- Once whisked, add the slaw and set aside, or in the fridge.
Suggested Toppings
- Cilantro or Spicy Mayo
- 1 Cucumber, ribboned (with a veggie peeler)
- Arugula, or other leafy green
- ½ small red onion, sliced thin
- 1 Jalapeno, sliced thin
- 4 Cilantro sprigs, or more
ASSEMBLY
Assembly Instructions
- Open the bread, if you have not done so already, and spread both sides with spread.
- Add the arugula then top with 2 tofu planks.
- Next, add desired amount of slaw, onions, jalapeno and cilantro, if using. Enjoy!
