Cilantro & Spicy Mayo (Raw & Nut-free Versions)

Cilantro Mayo

Oh, that good ol’ mayo! I feel like I am the only person on the planet who does not like mayonnaise! People are shocked when “I say I don’t like mayo”. Yes, even vegan versions. Some actually smell like actual mayo and to me that is the worse part! People make comments about sandwiches being “too dry” without mayo but I think it ruins the sandwich. I love mustard and prefer that on my sandwich. Just my opinion! To each, his own, my friend!

You’re probably wondering why I made a vegan mayo then. Because it TASTES better than actual mayo, if I do say so myself! Especially with the cilantro. I have 2 to versions below. Both are identical EXCEPT one has Cilantro and the other has hot sauce. Feel free to make a spicy-cilantro version! Below is a vegan version and a raw vegan version. One more note, you WILL get the same consistency if you decide to use sunflower seeds. Be sure to soak the raw cashew or raw sunflower seeds for an hour or so in warm water first!

Use as a sandwich spread, veggie dip or salad dressing!

Cilantro Mayo

  • 1 cup raw cashew or raw sunflower seeds, soaked
  • ¾ – 1 cup water
  • 1 tsp Dijon mustard (or 1 small lemon juiced- for a raw version)
  • 1 garlic clove
  • ¼ cup Cilantro, stems ok
  • ¼ tsp Salt, or more to taste
  • ¼ tsp pepper

Cilantro Mayo Instructions

  1. Add all of the ingredients into a blender.
  2. Blend until smooth.

 Spicy Mayo (not pictured)

  • 1 cup raw cashew or raw sunflower seeds, soaked
  • ¾ – 1 cup water
  • 1 tsp Dijon mustard (or 1 small lemon juiced- for a raw version)
  • 1 garlic clove
  • ¼ cup Cilantro, stems ok
  • ¼ tsp Salt, or more to taste
  • ¼ tsp pepper
  • 1+ tsp hot sauce*, or more for desired spiciness

*Note: For a raw vegan version, sub use ¼ – ½ of a jalapeno!

 Spicy Mayo Instructions

  1. Add all of the ingredients into a blender.
  2. Blend until smooth.
