Vegan Parmesan

Cashews are really a unicorn food. Well, so is nooch (nutritional yeast). And by unicorn, I mean magical! Together nooch and cashews make a mock Parmesan cheese. How?! I don’t know exactly but I am amazed! Adding sea salt gives you that sharp cheese taste you, perhaps, crave (or once craved & loved) and a hint of garlic give you a flavor profile you were not expecting. Sprinkle this on top of pasta, pizza, salad or any way you traditionally use Parmesan! It won’t disappoint.

  • 1 cup raw cashews
  • ¼ heaping cup nutritional yeast
  • 1 tsp sea salt
  • ½ tsp garlic powder


  1. Add all ingredients to a food processor and pulse until it grates into a crumbly consistency.

Tip: Store in a jar, in the refrigerator. Lasts for several weeks.
