10 EASY Make-Ahead [Vegan] Lunch Ideas

10 lunch ideas

All of these lunch ideas take 30 minutes or less to cook! These can be made the night before (or nights before) or in the morning- if you are a morning person and have 20 minutes to spare. Some of these are my older recipes and some are new. All are simple and filling. Give them a try! If you make one (or more) let me know in an e-mail or comment below!

1. 2 Peas {& Carrots] in their Pods

2 Peas {& Carrots] in their Pods are one of my favs. I recommend packing the beans & toppings separately then warming the beans before consuming. Warming the beans is an optional step & just a perference. This is really filling and pairs well with soup!

2. Elephant Wrap


My Elephant Wrap is basically rolling veggies into veggies. Trust me when I say, the flavor is there! This is quick, light lunch that takes no time! Roll like a burrito & roll in aluminum to ensure that it doesn’t fall apart.

3. Lemon Pesto Kelp Noodles

This Lemon Pesto Kelp Noodles is so simple and fast you don’t even have to cook it! Make this on a super hectic morning & fast go-to lunch!

4. Basil-Baby Bella Brown rice

The longest part of this Basil-Baby Bella Brown Rice recipe is cooking the rice. The solution? Buy frozen, precooked brown rice from Trader Joe’s! This is a super quick lunch idea that pairs nicely with a garden salad!

5. Roll-up Cilantro Cream Sammie


You can prep everything in this Roll-up Cilantro Cream Sammie the night before and assemble in the morning. Assembly doesn’t take more than 10 minutes. You don’t even have to cut the wrap in that case. Roll like a burrito & roll in aluminum to make sure it doesn’t fall apart.

6. Smoky Chickpea Naan Wrap


For a walk into flavor town, this Smoky Chickpea Naan Wrap is the perfect solution! Make this & separate into 3 containers: 1 for the chickpeas and spinach, 1 for the zucchini & onions & 1 for the spread (hummus). The naan can be pre-toasted, folded in aluminum then heated for a few seconds during your lunch break! Assembly is easy.

7. Six Veggie Quinoa Stir Fry


Better than Chinese take-out (especially in terms of healthy), this Six Veggie Quinoa Stir Fry is super flavorful and cooks in no time. Again, the longest part of this recipe is cooking the quinoa. The solution? Buy frozen, pre-cooked quinoa from Trader Joe’s!

8. Chickpea Salad Kale Salad

Try this  hardy, filling Chickpea Salad Kale Salad. This salad proves that salads are not boring! Chickpeas and kale are an excellent sources of protein. This recipe also includes an easy Miso Dressing but for a time saver, you can use any kind you like!

9. [Coconut Bacon] BLT

Please don’t be intimidated by the Coconut Bacon used in this [Coconut Bacon] BLT! It only takes 10 minutes in the oven & a 30 seconds of assembly. If coconut is not your thing, try my Maple Tempeh Bacon BLT! Note: I would store the veggies & spread separate to make sure the bread doesn’t become soggy.

10. Non-chemical Romance Green Smoothie
