As a previous meat eater, my go-to sandwich was a BLT. I’ve always craved savory, crunchy food. So a BLT was an easy choice. When I adopted a plant based diet, I was elated to know there was vegan bacon! When I discovered I could make my own, I was excited but thought I couldn’t pull it off. Boy, was I wrong!
A while back I shared a Tempeh Bacon recipe along with a Tempeh BLT recipe. My last post included Coconut Bacon. Today, I share a Coconut Bacon BLT recipe! As I mentioned before, I got inspired to make Coconut Bacon when I went to a local Philly spot that had a Coconut Bacon BLT.
The coconut bacon recipe is SIMPLE and does not make take additional prep or much time. Another thing, I don’t like mayo. Since I don’t enjoy vegetarian mayo, I am actually afraid to try vegan mayo. Most people say, “OMG! Vegan mayo tastes like real mayo!” Well, I’m not sold because I don’t like the taste of mayo. That being said, there is no mayo on this sandwich. Please, feel free to use your mayo if you love it! I added my Spicy Ketchup instead. So good!
- 1-2 slices bread (I used Ezekiel Bread)
- ½ coconut bacon
- ½ medium tomato, sliced
- 1 romaine leaf, trimmed
- 1 red onion slice, optional
- 2 tbsp spicy ketchup (or mayo or ½ avocado haas)
- Spread each slice of bread with desired amount of spicy ketchup (or mayo or avocado). Top the spread with Coconut Bacon, followed by slices of tomato, onion and lettuce leaves. Top the sandwich with another slice of bread, if desired. Cut in half and serve immediately.
Note: There’s no one way to assemble a sandwich so do what feels right!
