It’s my favorite time again… Snack time! Lately, I have been loving the blueberries at the produce store! They are so ripe and sweet that I have to stop myself from eating the entire container in one sitting! Most of us love blueberries but do we all love rice cakes? Probably not. But seriously- Don’t discredit rice cakes! With added toppings, rice cakes are a delicious, crunchy treat. I typically have these as an afternoon boost, kind of a pre-dinner snack. I used plain brown rice cakes. Careful with the sugar and sodium in the flavored ones. Hope you enjoy!
The Modern Day PB&J (Peanut Butter & ‘Jelly’)
Ingredients
- 1 brown rice cake
- 1 tbsp peanut butter (I used Justin’s Honey Peanut Butter)
- 1 small handful blueberries
- 1-2 tsp hemp seeds (for added protein)
Instructions
- Spread the peanut butter on the rice cake.
- In a small bowl, mash the blueberries with spoon (or pestle) then spread mixture on top of the peanut butter.
- Sprinkle with hemp seeds. Enjoy!
AB&B – Almond Butter & Blueberry
Ingredients
- 1 brown rice cake
- 1 tbsp almond butter (I used Trader Joe’s Almond Butter)
- 1 small handful blueberries
- 1-2 tsp ground flax seeds
- 1 tsp hemp seeds, optional
Instructions
- Spread the almond butter on the rice cake then add the toppings and enjoy!
