Olive Oil Tomato-Basil Penne


A common myth is that homemade food takes too long. Not true. Some homemade foods do take hours to prepare and cook but not all of them. I’m a 40 minutes or less kind of gal most of the time and it taste just as good as a 3 hour meal. If it takes longer, I don’t mind. I take my time when I cook. Besides, cooking is my therapy. However! I do understand that everyone is like this- so you were my inspiration! I understand being in a hurry and not having time.

Gluten-Free Carbs=Little Cook Time. No lie, gluten-free pastas cook in half the time of gluten pastas. Quinoa pasta can cook in 6-8 minutes. And it taste just as good as gluten pasta! My Olive Oil Tomato-Basil Penne is a quick flavorful dish that will take about 10 minute to cook. The 5 main ingredients- penne pasta, olive oil, grape tomatoes, baby spinach and basil- blend refreshingly and cook in 10 minutes!


  • 1 box penne pasta (I used quinoa pasta)
  • 2 tbsp olive oil
  • 3 garlic cloves
  • 1 small piece of onion, diced (about 2 tbsp)
  • 15 grape tomatoes, halved
  • ¼ tsp dry sage
  • ¼ tsp dry rosemary
  • ½ tsp dry oregano
  • 1 pinch salt
  • ½ tsp pepper
  • 1 handful baby spinach, roughly chopped
  • 4 large basil leaves, sliced
  • 1 tbsp mozzarella on top, optional

Note: Italian seasoning can replace the dry herbs in this dish if you don’t have any.

Cooking Instructions

  1. Boil pasta until al dente. Reserve about 1/8 cup of pasta water, drain pasta then set aside.
  2. In a large sauce pan add olive oil, garlic and onions. Over medium heat, sauté until translucent.
  3. Next, add the herbs, salt, pepper, tomatoes and reserved pasta water. Sauté for about 2 minutes then add the spinach.
  4. Sauté the spinach for 1 minute then add the penne. Let cook on low heat for 2-3 minutes then add the fresh basil.
  5. Turn off heat. Drizzle with a little extra olive oil, if desired.
